Ingredients:

  2. 1 cup chopped red onion 

  3. 4 cloves garlic, minced 

  4. 2 teaspoons minced fresh ginger root (adjust to taste) 

  5. 4 teaspoons minced chipotle peppers in adobo sauce 

  6. 1 cup chopped fresh cilantro 

  7. 1 lime, juiced
