Keys Creamy Parmesan Sauce for Fish

This creamy Parmesan sauce is the perfect complement to any seafood. Quick, easy, and incredibly flavorful, it’s sure to become your go-to sauce for fish.

Ingredients 

  1. 2 teaspoons butter, or as needed 

  2. 1 ½ cups freshly grated Parmesan cheese 

  3. 2/3 cup butter, softened 

  4. ½ cup mayonnaise 

  5. ½ cup chopped green onion 

  6. 6 tablespoons lemon juice 

  7. 4 teaspoons dried dill weed (Optional) 

  8. ½ teaspoon salt 

  9. ½ teaspoon ground black pepper 

  10. 4 dashes hot pepper sauce (such as Tabasco®) 

  11. 4 pounds fresh fish fillets 


Directions 

1. Gather the ingredients. Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a large baking sheet with aluminum foil and lightly coat with 2 teaspoons of butter. 

2. In a medium bowl, mix together the Parmesan, 2/3 cup butter, mayonnaise, green onion, lemon juice, dill, salt, black pepper, and hot sauce until well combined. Set aside. 

3. Lay fish fillets in a single layer on the prepared baking sheet. 

4. Cook the fish under the preheated broiler until it flakes easily with a fork, about 7 to 8 minutes. 

5. Gently spread the Parmesan mixture over the fish; return to the broiler and cook until the topping is bubbly and lightly browned, about 2 more minutes. 


Chef's Notes 

You can substitute the green onion with red onion or add garlic for a more robust flavor. 

Feel free to skip the hot sauce if you're not a fan of spice, or add more for extra heat. 

If using thicker fish fillets, you may want to broil for a bit longer or lightly sear the fillets before broiling to ensure even cooking. 



Suggestions 

  1. Try using this sauce with other types of fish, such as tilapia, haddock, or halibut. 

  2. For an extra twist, serve this sauce over mashed potatoes or roasted vegetables for a comforting side. 

  3. If you enjoy more texture, try adding some crushed garlic croutons on top of the Parmesan mixture before broiling. 

  4. This sauce pairs wonderfully with a side of rice pilaf or a simple green salad.
