Kachumbar is a refreshing Indian-style salad, perfect as a side dish to balance the rich flavors of curry. With fresh herbs, lemon juice, and the crunch of cucumbers and tomatoes, this salad lightens even the most intense gravies.

Ingredients
3 cups halved grape tomatoes
3 cups diced cucumber
1 ½ cups chopped green onions
1 ½ cups chopped fresh cilantro
3 tablespoons fresh lemon juice
3 tablespoons chopped fresh mint
Salt and ground black pepper to taste
Directions
1. In a large bowl, combine the grape tomatoes, cucumber, green onions, cilantro, lemon juice, mint, salt, and pepper.
2. Mix everything together well and adjust seasonings to taste.
3. Serve immediately as a refreshing side dish or store in the fridge until ready to serve.

Suggestions
For extra flavor, add a drizzle of olive oil to the salad before serving.
Add a pinch of chili powder or cumin for a more exotic flavor.
Substitute fresh parsley for cilantro if you prefer a milder flavor.
