These vegan pancakes are the best you’ll find, with a secret ingredient – custard powder – that ensures they are light, fluffy, and delicious. These pancakes are the perfect breakfast treat, with a texture just like traditional pancakes but completely egg-free!

Ingredients
8 cups self-rising flour
2 tablespoons white sugar
2 tablespoons custard powder
4 cups soy milk (or other plant-based milk)
Non-stick cooking spray for greasing the pan
Directions
1. In a large bowl, whisk together the self-rising flour, sugar, and custard powder.
2. Gradually mix in the soy milk, whisking until the batter is smooth with no lumps.
3. Heat a griddle or frying pan over medium heat and coat with non-stick cooking spray.
4. Spoon the pancake batter onto the griddle, cooking until bubbles form on the surface of the pancakes.
5. Flip the pancakes and cook until golden brown on both sides, about 2-3 minutes per side.
6. Serve hot with your favorite syrup, jam, or fresh fruit.

Suggestions
Add fresh blueberries, sliced bananas, or other fruits to the batter for a fruity twist.
Top with a drizzle of maple syrup, a sprinkle of powdered sugar, and a few fresh berries for the perfect vegan breakfast.
For extra flavor, try adding a teaspoon of vanilla extract or cinnamon to the batter.
10. If you like your pancakes even fluffier, try adding a bit more soy milk or even a splash of sparkling water for added lift.
