Keys Glazed Carrots (Large-Group Recipe)

These delightful glazed carrots are a sweet and savory side dish that will become a crowd favorite at any gathering. The buttery brown sugar glaze gives the carrots a caramelized finish that will impress both kids and adults alike. This scaled-up recipe is perfect for feeding 12-14 people, making it ideal for larger family gatherings, holiday meals, or potlucks. 

Ingredients: 

  1. 4 pounds carrots, peeled and cut into sticks 

  2. ½ cup butter 

  3. ½ cup packed brown sugar (or to taste) 

  4. ½ teaspoon salt 

  5. ¼ teaspoon ground white pepper 

Directions: 

1. Place carrots into a large saucepan; add enough water to cover them by about 1 inch. Bring to a boil, then reduce heat to low, cover, and simmer for 8-10 minutes or until the carrots are tender. Drain and transfer the carrots to a large bowl. 

2. In the same saucepan, melt butter over low heat. Stir in brown sugar, salt, and white pepper until dissolved and the mixture is smooth. 

3. Add the carrots back into the saucepan with the glaze. Toss the carrots in the glaze, cooking over medium heat for an additional 1-3 minutes or until the glaze has thickened and fully coats the carrots. 

4. Serve immediately and enjoy this easy, flavorful side dish! 

Suggestions for Customization and Variations: 

For an extra depth of flavor, add a pinch of cinnamon or a tablespoon of teriyaki sauce to the glaze. 

Try adding a dash of paprika for a smoky twist to the glaze. 

If you like a bit of tang, substitute some of the brown sugar with honey and add a teaspoon of finely grated ginger. 

To make the dish even more vibrant, sprinkle chopped parsley or toasted sesame seeds on top for added color and texture. 

If you’re looking for a unique flavor, add a squeeze of fresh orange juice to the glaze, or mix in some balsamic vinegar for a deeper, richer taste. 

For a touch of spice, use a sprinkle of cayenne pepper to balance out the sweetness of the glaze.
