  2. 1 ½ teaspoons salt

  3. 7 cups water

  4. 2 cups canned garbanzo beans (chickpeas), drained

  5. 2 tomatoes, chopped

  6. 2 cloves garlic, minced

  7. 6 tablespoons lime juice

  8. 8 teaspoons olive oil

  9. 1 teaspoon ground cumin

  10. 1 pinch salt and pepper to taste

  11. 1 cup chopped fresh parsley

    ree

Directions

  1. 1. Rinse the quinoa in a fine mesh strainer under cold water until the water runs clear. In a saucepan, combine quinoa, salt, and water. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 20-25 minutes, or until the quinoa is tender.

  2. 2. Once the quinoa is cooked, stir in the garbanzo beans, chopped tomatoes, garlic, lime juice, and olive oil. Season with cumin, salt, and pepper to taste.

  3. 3. Top with freshly chopped parsley before serving.

Suggestions

  1. For a richer flavor, sauté the garlic and onions in olive oil before adding to the quinoa mixture.

  2. Add some diced avocado or crumbled feta cheese for an extra creamy texture.

  3. Substitute the parsley with cilantro for a fresh and zesty twist.

  4. To add more protein, consider stirring in some cooked lentils or chickpeas.

  5. For a more substantial dish, add some sautéed vegetables like bell peppers, zucchini, or mushrooms.
