Keys Quinoa with Chickpeas and Tomatoes

This delicious quinoa dish with chickpeas, tomatoes, and lime juice brings together fresh flavors in a simple yet satisfying meal. Perfect for a light lunch or a side dish with your favorite main course.

Ingredients
4 cups quinoa
1 ½ teaspoons salt
7 cups water
2 cups canned garbanzo beans (chickpeas), drained
2 tomatoes, chopped
2 cloves garlic, minced
6 tablespoons lime juice
8 teaspoons olive oil
1 teaspoon ground cumin
1 pinch salt and pepper to taste
1 cup chopped fresh parsley

Directions
1. Rinse the quinoa in a fine mesh strainer under cold water until the water runs clear. In a saucepan, combine quinoa, salt, and water. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 20-25 minutes, or until the quinoa is tender.
2. Once the quinoa is cooked, stir in the garbanzo beans, chopped tomatoes, garlic, lime juice, and olive oil. Season with cumin, salt, and pepper to taste.
3. Top with freshly chopped parsley before serving.
Suggestions
For a richer flavor, sauté the garlic and onions in olive oil before adding to the quinoa mixture.
Add some diced avocado or crumbled feta cheese for an extra creamy texture.
Substitute the parsley with cilantro for a fresh and zesty twist.
To add more protein, consider stirring in some cooked lentils or chickpeas.
For a more substantial dish, add some sautéed vegetables like bell peppers, zucchini, or mushrooms.
