Keys Reuben Sandwich Lunch (Large-Group Recipe)

The Reuben Sandwich is a classic deli favorite that is simple to make, delicious, and perfect for lunch. This large-scale version serves 12-14 people and is ideal for picnics, gatherings, or a fun family meal. With layers of corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing, all grilled to perfection on rye bread, this sandwich is a true crowd-pleaser. 


Ingredients: 

  1. 24 slices rye bread 

  2. 1 cup Thousand Island dressing 

  3. 24 slices Swiss cheese 

  4. 24 slices deli-sliced corned beef 

  5. 3 cups sauerkraut, drained 

  6. 6 tablespoons butter, softened 


Directions: 

1. Gather all ingredients and preheat a large griddle or skillet over medium heat. 

2. Spread one side of each bread slice evenly with Thousand Island dressing. 

3. On half of the bread slices, layer 2 slices of Swiss cheese, 4 slices of corned beef, ½ cup sauerkraut, and a second slice of Swiss cheese. 

4. Top with the remaining bread slices, dressing-side down. Butter the top of each sandwich. 

5. Place sandwiches, butter-side down, on the preheated griddle. Butter the top of each sandwich with the remaining butter. 

6. Grill until both sides are golden brown and the cheese is melted, about 5 minutes per side. 

7. Serve hot with your favorite side dishes like coleslaw, French fries, or pickles.

Suggestions for Customization and Variations: 

For extra flavor, try using Pastrami in place of the corned beef. 

If you're looking for a lighter version, try using whole wheat bread instead of rye or swap in a low-fat dressing. 

For a tangier kick, add a few slices of pickles or some spicy mustard to the sandwich. 

For a more authentic touch, toast the bread before assembling the sandwich for extra crunch. 

If you want a vegetarian option, substitute the corned beef with grilled portobello mushrooms or tempeh. 

To make it even more indulgent, add a slice of melted Havarti or Gruyere cheese along with the Swiss.
