Keys Roasted Beets and Carrots with Honey-Balsamic Glaze (Large-Group Recipe)

This deliciously simple recipe roasts beets and carrots in the oven and then simmers them in a honey-balsamic glaze. The natural sweetness of the vegetables pairs perfectly with the tangy glaze, making this dish an irresistible addition to any gathering. This scaled-up recipe will serve 12-14 people, perfect for larger meals and gatherings. 

Ingredients: 

  1. 8 medium beets, trimmed and scrubbed 

  2. 16 carrots, cut into 1-inch chunks 

  3. 2 tablespoons olive oil 

  4. 6 tablespoons balsamic vinegar 

  5. 4 tablespoons honey (or to taste) 

Directions: 

1. Preheat the oven to 350°F (175°C). Line a baking sheet with aluminum foil. 

2. Wrap the beets in aluminum foil and place them in a baking dish. Toss the carrots with olive oil and arrange them in a single layer on the prepared baking sheet. 

3. Roast the beets in the preheated oven for 1 ½ hours, adding the carrots during the last 30 minutes. Remove the beets from the oven and set aside to cool. Check the carrots for tenderness and roast them for up to 20 more minutes if necessary. 

4. Peel and chop the beets into 1-inch pieces. 

5. Combine the balsamic vinegar and honey in a large saucepan over medium heat. Add the roasted beets and carrots, and simmer until the sauce thickens and the vegetables are well-coated in the glaze, about 5-10 minutes. 

6. Serve the glazed beets and carrots warm and enjoy! 

Suggestions for Customization and Variations: 

For a touch of sweetness, add a small amount of brown sugar and a squeeze of lemon juice to the glaze. 

If you prefer more flavor, season the vegetables with salt, pepper, and garlic before roasting them. 

Try adding other root vegetables like parsnips or sweet potatoes for an even heartier side dish.
