These creamy and flavorful scalloped potatoes, enhanced with crispy bacon and tangy sour cream, are a crowd-pleaser for any gathering. The combination of tender potatoes, savory bacon, and melted cheese makes this dish a favorite at barbecues, family dinners, and special occasions. This recipe is scaled up to serve 12-14 people, making it the perfect side for your next large meal.
Ingredients:
16 red potatoes, sliced into 1/4-inch thick slices (skins on)
2 cups mayonnaise
1 cup sour cream
2 tablespoons onion powder
2 tablespoons garlic powder
2 teaspoons seasoned salt
2 teaspoons ground black pepper
1 ½ cups crumbled cooked bacon
1 cup diced red onion
4 cups shredded American cheese
6 tablespoons grated Parmesan cheese
Directions:
1. Preheat the oven to 350°F (175°C). Grease a large 9x13-inch baking dish.
2. Slice the red potatoes into 1/4-inch thick slices with the skins on. Place the sliced potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce the heat to medium-low, cover, and simmer until the potatoes are tender, about 10-15 minutes. Drain and let the potatoes steam dry for a couple of minutes.
3. In a bowl, mix together the mayonnaise, sour cream, onion powder, garlic powder, seasoned salt, black pepper, crumbled bacon, red onion, and shredded American cheese.
4. Stir in the cooked potato slices, making sure they're well-coated in the creamy mixture. Transfer the mixture into the prepared baking dish and top with the grated Parmesan cheese.
5. Bake the potatoes in the preheated oven for 35-40 minutes, or until bubbly and the top begins to brown.
6. Serve warm and enjoy the cheesy, bacon-filled goodness!
Suggestions for Customization and Variations:
For extra flavor, sprinkle some freshly chopped parsley on top before serving.
If you'd like to reduce the richness, substitute some of the mayonnaise with low-fat yogurt or sour cream.
You can also add in some sautéed garlic or shallots for extra savory depth.
For a unique twist, try adding some fresh herbs like thyme or rosemary to enhance the flavor of the dish.
To make this dish more hearty, consider layering in some steamed broccoli or spinach along with the potatoes.
If you prefer a slightly crispier texture, broil the top for a few minutes until it’s golden and bubbly.

For a slight tang, add a tablespoon of Dijon mustard to the mayonnaise and sour cream mixture.
These scalloped potatoes with bacon are a comforting and indulgent side dish that will satisfy any crowd. With layers of creamy goodness and the savory bite of bacon, it’s sure to become a favorite in your recipe rotation!
