Ingredients
½ cup heavy cream
2 large egg yolks, beaten
¼ cup butter or margarine
2 tablespoons dry sherry or madeira
½ teaspoon salt
1 pinch cayenne pepper
1 pinch ground nutmeg
¾ pound cooked Spiny lobster meat, broken into chunks
Directions
Whisk cream and egg yolks together in a small bowl until well blended.
Melt butter in a saucepan over low heat. Stir in cream mixture and sherry; cook, stirring constantly, until mixture thickens, 5 to 8 minutes; do not boil.
Remove from the heat and season with salt, cayenne, and nutmeg. Stir in lobster.
Return to the stove and cook gently over low heat until heated through, about 5 minutes. Serve hot.

Suggestions
Use fresh lobster if possible, but you can substitute 12 ounces of canned lobster if you must.
If you don't like spicy food, use paprika in place of cayenne pepper.
Serve with rice, pasta, or over a bed of sautéed greens.
For a variation, consider substituting shrimp or crab for the lobster.
For a lighter version, use half the butter and substitute some of the heavy cream with a lighter alternative.
