Keys Spiny Lobster Tails Steamed in Beer (Large Group Version)

This Florida Keys-style recipe brings out the natural sweetness of local spiny lobster tails by steaming them gently in beer. The result is tender, flavorful meat infused with a hint of lager. Perfect for casual dinners or beachside celebrations. Serve with garlic butter, lemon wedges, and your favorite sides like grilled corn, rice, or roasted potatoes.

Ingredients 

- 8 to 10 whole spiny lobster tails (medium size, thawed if frozen) - 1 (12 oz) can of light lager beer (use a second can if needed to increase steam volume) - 1 tablespoon minced garlic (optional for infusion) - 1/2 teaspoon crushed red pepper (optional) - 1 teaspoon Old Bay or seafood seasoning (optional) - Melted butter, for serving - Fresh lemon wedges, for serving 


Directions 

1. In a large pot or stockpot with a lid, bring the beer to a simmer over medium-high heat. Add garlic, red pepper, or other seasonings directly to the beer if desired. 2. While beer is heating, split lobster tails lengthwise to help steam penetrate the meat and allow for easier serving. 3. Place a large steamer basket over the pot. Arrange lobster tails in the basket. Work in batches if needed. 4. Cover and steam for 8–10 minutes, or until lobster meat is opaque and firm. Add more beer as needed. 5. Serve immediately with melted butter and lemon wedges on the side. Garnish with fresh herbs if desired.
