This crisp peach cobbler offers the perfect combination of sweet and tart flavors with a crispy, golden-brown topping. Ingredients:
12 large fresh peaches, pitted and cut into eighths
2 lemons, zested and juiced
Crumble:
1 cup unsalted butter, at room temperature
2 ½ cups white sugar
2 ½ cups self-rising flour
1 cup rolled oats
1 ¼ cups whole milk
Glaze:
½ cup white sugar
4 tablespoons cold water, or as needed to wet topping sugar
Directions:
1. Preheat the oven to 375°F (190°C). Place a baking sheet on the rack under the middle rack to catch any drips. Generously butter a 2-quart baking dish.
2. Place peach sections into the prepared baking dish. Sprinkle with lemon juice and zest.
3. Stir together butter and sugar in a mixing bowl until creamy, about 4-5 minutes. Add oats and flour and stir until the mixture resembles coarse crumbs. Pour in milk and stir until the batter is thick and spreadable.
4. Drop batter by spoonfuls on top of the peaches. Spread evenly. Sprinkle ½ cup sugar over the batter and spritz with water to moisten the sugar.
5. Bake in the preheated oven until the top is golden brown and the fruit is bubbling, about 45 minutes. Let cool for 30 minutes before serving.
