Keys Tropical Fruit Lemon Raspberry & Strawberry Golden Oreo Fluff (Large-Group Recipe)

This tropical fruit fluff combines the tartness of raspberries and strawberries with the creamy texture of lemon pie filling, Golden Oreos, and a whipped cream mixture. It's a refreshing, easy-to-make dessert that's perfect for any large gathering. This scaled-up recipe serves 12-14 people, making it a wonderful choice for picnics, parties, or family gatherings. 


Ingredients: 

  1. 4 (3.4 ounce) packages lemon instant pudding and pie filling (such as Jell-O®) 

  2. 6 cups whole milk 

  3. 6 cups coarsely crushed cream-filled vanilla sandwich cookies (such as Golden Oreos®), plus more for garnish 

  4. 6 cups heavy cream 

  5. ½ cup confectioners sugar 

  6. 4 teaspoons vanilla extract 

  7. 2 (18 ounce) jars seedless raspberry jam 

  8. 2 teaspoons grated lemon zest 

  9. 2 tablespoons fresh lemon juice 

  10. 4 (6 ounce) packages fresh raspberries, plus more for garnish 

  11. 4 (2 pints) packages fresh strawberries, plus more for garnish 


Directions: 

1. Gather all ingredients. 

2. In a large bowl, whisk pudding mix and milk together until well combined, about 2 minutes. Let sit until thickened, about 5 minutes. Fold in sandwich cookies. 

3. Meanwhile, beat cream, confectioners sugar, and vanilla in the bowl of a stand mixer fitted with a whisk attachment on medium-low speed until foamy, about 1 minute. Increase speed to medium-high, and beat until soft peaks form, 2 to 3 minutes. Spoon about 4 cups whipped cream into a bowl and set aside. Beat the remaining cream mixture on medium-high until stiff peaks form, about 1 minute. Gradually fold stiff-peak whipped cream into the pudding mixture until just combined. 

4. In a large bowl, whisk together raspberry jam, lemon zest, and lemon juice. Fold in fresh raspberries and fresh strawberries. 

5. Spoon about 5 1/3 cups of pudding mixture into a 4-quart trifle dish, and spread into an even layer. Spread about 3 cups of the raspberry mixture over pudding layer. Repeat layering with the remaining pudding mixture and raspberry-strawberry mixture. 

6. Spread the remaining pudding mixture evenly over the raspberry mixture. Top with reserved soft-peak whipped cream. Garnish with additional raspberries and sandwich cookies.

Suggestions for Customization and Variations: 

Add a tropical flair by incorporating cubed mango or pineapple into the raspberry-strawberry mixture. 

For a more indulgent treat, layer with a combination of crushed macadamia nuts or toasted coconut. 

Consider using a mix of other fruit jams, such as strawberry or blueberry, for a unique twist. 

For a lighter version, substitute some of the heavy cream with Greek yogurt or whipped coconut cream. 

If you prefer less sweetness, reduce the amount of jam or use fresh fruit with minimal added sugar. 

You can also add a squeeze of lime juice to the whipped cream or fruit mixture to enhance the tanginess.
