These tender, juicy country-style ribs are slow-baked in the oven with layers of garlic, citrus, and your favorite barbecue sauce. This method delivers ribs that are flavorful and fall-apart tender without a grill—perfect for backyard feasts or beachside dinners in the Keys.
Prep Time: 15 minutes Cook Time: 3 hours Total Time: 3 hours 15 minutes Servings: 12–14
Ingredients
- 24 to 28 country-style pork ribs (about 10 lbs) - 4 teaspoons minced garlic - 2 to 3 medium lemons, thinly sliced (optional) - 2 (18 oz) bottles of your favorite BBQ sauce - Kosher salt or seasoning salt to taste - Optional: sliced onions or citrus alternatives like orange for extra zest
Directions
1. Preheat oven to 250°F (120°C). Arrange ribs in a single layer across two large roasting pans or deep baking trays. 2. Sprinkle with kosher salt and spread garlic evenly over each rib. Place lemon slices (or citrus of choice) on top of the ribs. 3. Cover with foil and bake for 2 hours, removing foil after the first hour. 4. Drain excess liquid and fat. Pour BBQ sauce over ribs to fully coat. 5. Lower oven to 225°F (110°C) and return ribs to oven, uncovered, for another 1 hour to allow sauce to thicken and bake into the meat. 6. Serve with extra warmed BBQ sauce on the side, if desired.
Flavor Tips & Variations
- Substitute lemon with orange or a blend of citrus for sweeter notes. - Add sliced onions under or on top of the ribs for extra flavor. - Mix brown sugar, garlic, or hot sauce into the BBQ sauce before baking. - Marinate ribs overnight in a garlic-onion rub or dry brine for deeper flavor. - This oven method works great in colder months or when outdoor grilling isn’t an option. - Try with other sauces like honey-garlic glaze, Caribbean jerk, or hoisin BBQ for variety.

Keys-Inspired Serving Ideas
- Serve with mashed potatoes and collard greens. - Pair with roasted sweet potatoes or grilled corn. - Plate with a tropical fruit slaw for brightness. - Offer alongside black beans and rice or mac and cheese for a hearty meal.
