These quick and healthy vegetarian chickpea tacos are an easy, flavorful option for Taco Tuesday or a quick weeknight meal. With a simple chickpea filling and your favorite taco toppings, they’re sure to be a family favorite.

Ingredients
4 (15 ounce) cans chickpeas, drained and rinsed
1 ½ cups water
2 (1 ounce) packages taco seasoning mix (such as Taco Bell®)
16 taco shells or tortillas
Directions
1. Place chickpeas in a large saucepan over medium heat. Add water and taco seasoning. Cook and stir for 5 to 7 minutes until heated through.
2. Use a masher or fork to mash the chickpeas, leaving some whole for texture.
3. Divide the chickpea filling evenly among taco shells or tortillas.
4. Add your desired toppings such as lettuce, salsa, shredded cheese, sour cream, or guacamole.
5. Serve and enjoy!

Suggestions
Add sautéed onions, bell peppers, or corn for extra flavor and texture.
Top with fresh cilantro, diced tomatoes, or shredded lettuce for a refreshing crunch.
For an extra kick, try adding a few slices of jalapeños or a drizzle of hot sauce.
Serve with a side of Mexican rice or a simple green salad to round out the meal.
For a different variation, use black beans or kidney beans instead of chickpeas.
