This simple and nutritious black beans and rice recipe is a quick and easy meal packed with flavor. A perfect dish to enjoy on its own or as a side, it’s hearty, satisfying, and full of tasty spices.

Ingredients
2 tablespoons vegetable oil
3 onions, chopped
2 (15 ounce) cans black beans, undrained and rinsed
2 (14.5 ounce) cans stewed tomatoes
2 teaspoons dried oregano
1 teaspoon garlic powder
3 cups uncooked instant brown rice
Directions
1. Heat oil over medium-high in a large saucepan. Add onions; cook and stir until tender. Add beans, tomatoes, oregano, and garlic powder. Bring to a boil.
2. Stir in rice. Cover; reduce heat and simmer for 5 minutes. Remove from heat; let stand for 5 minutes before serving.

Suggestions
For extra flavor, sauté garlic and onions before adding the other ingredients.
Add a squeeze of lime juice for a tangy kick or a drizzle of hot sauce for spice.
Add sautéed bell peppers, corn, or fresh cilantro for added flavor and texture.
Try using chicken broth instead of water for a more savory taste.
For added richness, top with a dollop of sour cream or shredded cheese.
