Ingredients
1 ½ pounds seashell pasta
4 tablespoons olive oil
4 onions, chopped
2 green bell peppers, chopped
1 ½ cups sweet corn kernels
2 (15 ounce) cans black beans, drained and rinsed
2 (14.5 ounce) cans peeled and diced tomatoes
¾ cup salsa
¾ cup sliced black olives
3 tablespoons taco seasoning mix
Salt and pepper to taste
Directions
1. Bring a large pot of salted water to a boil. Add pasta and cook for 8 to 10 minutes, or until al dente; drain.
2. While pasta is cooking, heat olive oil over medium heat in a large skillet. Add onions and bell peppers, and cook until softened, about 10 minutes.
3. Stir in corn and heat through. Add black beans, diced tomatoes, salsa, olives, taco seasoning, and salt and pepper to taste. Cook for an additional 5 minutes, stirring occasionally.
4. Toss the sauce with the cooked pasta and serve.

Suggestions
Add sautéed onions, bell peppers, or even roasted veggies for extra flavor and texture.
Top with shredded cheese, sour cream, guacamole, or fresh cilantro for a burst of flavor.
For added heat, sprinkle with some chopped jalapeños or hot sauce.
Serve with a side of Mexican rice or a fresh green salad.
For a meatier version, add ground turkey, beef, or chicken to the mixture.
