This garbanzo bean stir-fry is a versatile, flavorful dish that's packed with veggies and herbs. Perfect for a quick weeknight meal or a healthy side dish, you can easily customize it with your favorite ingredients.

Ingredients
4 tablespoons olive oil
2 tablespoons chopped fresh oregano
2 tablespoons chopped fresh basil
2 cloves garlic, crushed
Ground black pepper to taste
4 (15 ounce) cans garbanzo beans, drained and rinsed
2 large zucchinis, halved and sliced
1 cup sliced mushrooms
2 tablespoons chopped fresh cilantro
2 tomatoes, chopped

Directions
1. Heat olive oil in a large skillet over medium heat. Add oregano, basil, garlic, and black pepper. Stir well.
2. Add garbanzo beans and zucchini. Stir to coat with oil and herbs. Cook, covered, for 10 minutes, stirring occasionally.
3. Stir in mushrooms and cilantro. Cook until vegetables are tender, about 10 minutes.
4. Place chopped tomatoes on top of the mixture. Cover and let tomatoes steam for 1–2 minutes, but do not let them get mushy.
5. Serve immediately and enjoy!
Suggestions
Add sautéed onions, bell peppers, or spinach for extra flavor and color.
Try serving this stir-fry over quinoa, rice, or in pita pockets.
For added protein, serve with grilled chicken, tofu, or roasted chickpeas.
Add a drizzle of soy sauce or a sprinkle of feta cheese for added depth.
To make it spicier, try adding chili flakes or a dash of hot sauce.
